Banana, carob chips and oats cake with peanut butter frosting
- 2 ripe mashed bananas
- 1 egg
- 4 tablespoons of honey
- 3 cups of whole wheat flour
- 2 cups of water
- ½ tablespoon of baking powder
- 1 cup of oats
- ½ of carob chips
- 1 cup of peanut butter
Preheat the oven to 350 degrees. Coat an 8-inch cake pan with cooking spray.
Mix the bananas, the egg, 3 spoons of honey and the water until you get a combined mixture. Add the flour, the baking powder and the oats and stir.
Pour the mix in the cake pan and sprinkle the carob chips.
With a fork, mix the carob chips in the batter but only slightly for some of them to be on the surface.
Bake for one hour. After that, bake for another 15 minutes if you think it is necessary. Let it cool in the pan for 30 minutes. Then, transfer it to a rack.
Finally, mix the peanut butter and the remaining spoon of honey thoroughly for the frosting and spread it over the cake.
Coconut and honey small cake
- 3 tablespoons of melted coconut oil
- 2 tablespoons of honey
- 3 eggs
- 1/3 of flour
Preheat the oven to 350 degrees and grease two 7-ounce ramekins.
Mix the coconut oil, the eggs and the honey. Then, stir in the flour until the mix is totally absorbed.
Divide the mixture between the two ramekins. Bake for approximately 15 to 20 minutes until the cakes are lightly brown and firm.
Allow them to cool and then remove them from the ramekins. Spread the yogurt and serve.
